Sustainable Bakery Interior Melds Local Materials and Circular Design in Panama
In Costa del Este, Panama City, architecture firm Mallol designed Krume Bäcker, a 193 m² bakery that combines Austrian baking heritage with local craftsmanship and circular design strategies. The project highlights how commercial interiors can support sustainability without compromising spatial quality or atmosphere.
Local Earth Forms the Foundation
A defining feature of the interior is the use of compacted earth for the bar and walls. Local studio Aparato applied this method using raw, unprocessed soil sourced nearby. Because this material requires no energy-intensive processing, it significantly reduces carbon emissions.
Moreover, compacted earth offers excellent thermal regulation and sound insulation, enhancing both comfort and efficiency. Its textured finish gives the interior a natural, tactile quality. By working closely with local artisans, the project also fosters knowledge-sharing and strengthens community ties.
Submerged Wood Reclaims Value
The bakery’s furniture tells another story of material innovation. Mallol Lifestyle Studio collaborated with The Alma Studio to design tables and chairs using native hardwoods salvaged from the Bayano Reservoir. These trees, submerged during a regional dam project decades ago, offer a sustainable alternative to conventional logging.
The Guna Madugandí Indigenous community helped retrieve the timber using low-impact techniques that protect the local ecosystem. After careful kiln-drying, the reclaimed wood gains long-term durability. In the finished space, these custom pieces add warmth and narrative depth, while maintaining a minimal environmental footprint.
A Calm, Flexible Interior
The layout accommodates quick visits and relaxed gatherings alike. With open circulation, neutral tones, and natural finishes, the design creates a welcoming and timeless interior. Lighting emphasizes the bakery’s central offering—bread—without overwhelming the space. The result is a setting that feels both grounded and refined.

Krume Bäcker demonstrates how sustainable materials and regional craftsmanship can enrich commercial environments. From earth-based construction to reclaimed hardwood furniture, the project offers valuable lessons for interior and architectural designers.
